Pinching Pennies: An update on our no spend month

We are halfway there! It's March 16 and we have made it through only buying milk, gasoline and paying bills.

Except for the minor fact that I had to fork out upwards of $800 on a trip to New Orleans to work with ESPN, however, that money will be reimbursed...only it'll be a month or two down the road.

So, it turned out to be a good idea that we were saving money this month to cover that expense and it will end up that we will have made some extra money on the side!

Not only did I work 12 games for ESPN at the Sun Belt Conference Basketball Tournament, but remember those textbooks I mentioned I was going to sell? I sold five for over $80! Not a tremendous profit, but they're worth more to me in my Paypal account than they were sitting on the shelf in my office.

When it comes to food, we've been really cleaning out the cabinets. We've had lots of box meals from hamburger helper to spanish rice (with chicken and sausage to spice it up a bit) and we are fortunate that my parents have supplied us with a great amount of deer meet ranging from roasts to cubed steak and lots of chicken as well.

We've eaten poppyseed chicken, chili, roast and even tried some new creations like mashed potato cakes (leftover mashed potato combined with egg and flour, then fried in a skillet...trust me, you'll want to try it! & add cheese!), and don't forget dessert! Chocolate Banana Bread, pudding (who knew that instant pudding in the cabinet was actually pretty good) and this slow cooker peanut butter & hot fudge pudding cake is DELICIOUS!! Try it yourself....(TONIGHT)

Oh, and these are a must try too. You can thank me later...(Biscuits, cheese, delicious-ness).

It's been a challenge sometimes to make time for cooking or to be motivated enough to make myself get off the couch after a long day and get to work, but it looks like we'll average saving close to $300 (PLUS adding some supplemental income) and all that is going straight toward paying off our debts.

We are heading toward a (semi) debt-free 2016! Of course, we still have a house payment, but getting EVERYTHING else cleared off would be a huge success.
